Who I Am.

Our Chef John Mobley hails from the city of Brotherly Love (Philadelphia, PA). He was introduced to the kitchen at a very early age, by his mother and multitude of Aunts who were well versed in southern cuisine. He has served in the World's greatest Navy for over 23 years. As a Culinary Specialist serving aboard multiple Naval Vessels, this is where his love for the culinary artists grew and was groomed.

Thai Curry Goat.
4lbs #Goat Meat (skinless).
Green Thai Curry
Sea salt.
Black Pepper
I used Bell peppers ( didnt want it too spicy for the kids)
Turmeric
Two cans of coconut milk
One can of coconut cream
Celery
Carrots
Green onions
Cilantro
Thai basil
lime leaves
Thyme.
Small dice all your chops, seasoning, your meat. Let it marinate for about two hours at least if you got time do it overnight.
Brown your meat off first. Then sauté your vegetables. Return your meat to the pot.
Add your coconut milk and coconut cream.
Cook it on slow for about 2 to 3 hours or until that meat is tender

Shawarma
You can use whatever meat you like i choose lamb today.

tzatziki sauce .
Minced cucumber ( peel off)
5 oz of plain greek yogurt
Half of lemon juiced
Minced garlic.
Thyme
Oregano •
Salt & pepper

Chicken & Dumplings.

1 whole chicken cut up and deboned. ( season however you like)
2 stalks of celery chopped.
2 onions diced.
4 carrots diced
4 cups of chicken stock
1 cup heavy whipping cream

Dumplings
1 small onion small diced ( for dumplings )
2 cups flour
Note: for my dumplings i used chicken flour)
1 cup of buttermilk
4 tbsp butter

Potato
Heavy cream
Parmesan & Romano cheese
I also used champagne cheddar
Chives and rosemary

Lobster and shrimp penne.
Lobster

Heavy Cream
Shallots
Champagne

Shrimp and Lobster Burger with , caviar caper mayonnaise.

Patagonian Tooth fish also know as the Chilean Sea Bass.

Asian peach slaw with a glazed pork belly

Short Stew.
2lbs of short ribs (boneless)
Celery
Onion
Carrot
Potatoes
Red bell peppers
Beef stock
Butternut squash
Brussels sprouts
Kinders seasoning
Garlic
1. Season the meat
2. Brown the meat off and and stock to it let it simmer until tender
3. Add your veggies and cook until the potatoes are done

Salmon and shrimp in a Cajun Cream sauce .

3. Do you provide linens and napkins? What are the costs associated with that?
If not, can you handle coordinating those rentals?
4. What is the server to guest ratio?
5. Will all the food be made on-site or prepared in advance and brought in?
6. Does our venue have enough kitchen space for you to execute our menu?
7. How will your staff balance multiple events on the same day?
8. Where do you source your food from?
9. How will everything be plated, portioned, and presented on the day of the event?
10. Do you also do wedding cakes? What other desserts do you do?
11. When do you need final menu choices and headcount?
12. Can you provide the vendor meals?
13. Do you provide bartending services? And if so, can you provide the alcohol?
14. Are non-alcoholic beverages included in the food costs? If not, what are those costs?
15. What is your cancellation policy?

Things that we need to know to help each other with your Event.

Because i charge by the guest count. I need to know how many guest you are thinking about inviting.

Keep in mind I do have set prices, but those things fluctuate, depending on menu items and type of service for instance, buffet service cost less than plated service..
I need the WHO, WHAT, WHERE, AND HIW MANY.
